i was planning to bake a sweet potato pie for a friend's birthday. i don't have much experience with pies (or sweet potatoes), so i did a trial run last week.
boil 1lb sweet potatoes 40-50 min
rinse with cold water and the skin peels right off
smash with a pastry blender
add a stick of butter
next add milk, eggs, sugar, and spices
mix until smooth
pour into unbaked pie crust
make sure it's smooth on top and stick it in the oven
first i should state that i loathe sweet potatoes. however, i enjoyed this pie (with a dollop of cool hwhip, naturally). i used a frozen pre-made pie crust, and i forgot to cover the edges with foil so they got a little over done. i might use brown sugar instead of white, and add a little flour to thicken up the batter if i ever make this again. but overall this pie was smashing.
