scrambled eggs a la vinny

breakfast food is the way to my heart.  when i was in college, one of the dining halls served breakfast for dinner on tuesdays and thursdays.  it was an unlimited buffet, and you could make your own belgian waffles.  on a related note, i was 30 lbs heavier in college (true story)

every so often, when i'm trying to keep my figure in check, i'll do atkins for a few weeks.  it really limits what foods i can eat, so the last time i dieted i tried to find ways to spice up some normally boring dishes.  don't get me wrong, i love eggs from my head down to my legs, but when you eat them for 1-2 meals every day you start craving a little diversity.  

these eggs were inspired by my friend vinny (hi vinny!  how's austin?).  some friends and i gathered at vinny's house before heading to the rally to restore sanity and/or fear, and he was kind enough to serve us a delicious homemade breakfast.  vinny's eggs had a little more going on, but i just used what i had on hand.  the most important (and delicous) ingredient is yellow curry.  feel free to add some diced onions and/or peppers, or whatever floats your boat really.  

i wanted bacon with my eggs, so i started with 3 slices and cut them in half

arrange them in a frying pan and cook on medium heat

while the bacon is frying, chop up some green onions


keep watching your bacon and don't forget to flip it like i did (you'll see why later)

add green onions to a bowl, crack in a few eggs and about 1/2 to 1 tsp yellow curry.
then whip them together with a fork

when the bacon is done (or accidentally burnt), set it on paper towels to drain.
dump excess grease but do not wipe the pan clean.  we're going to cook our eggs in that! 
return frying pan to flame and pour the egg mixture in

at this point i added some shredded mexican cheese

using the old "push and scrape" method, move the eggs around
the pan with a spatula until they are cooked to your liking.

place them on a plate with your bacon and add another sprinkling of cheese

let that goodness get a little melty and then dive right in

ingredients
1 tbsp butter, margarine, or rendered bacon fat
3 eggs
1/8 cup chopped green onions/scallions
1/2 tsp yellow curry powder
1/4 cup shredded cheese

method
melt butter/margarine/bacon fat in frying pan on medium heat
in the meantime, whisk together eggs, green onions, & curry in a small bowl, add to pan
sprinkle with cheese, reserving a pinch or two for later
push and scrape mixture around pan until cooked and no longer "wet" looking (longer if you like your eggs browned a bit)
remove to a dish and sprinkle with more cheese



with just a few simple modifications, you can spice up any boring old breakfast.

  2. You also just can't beat a country ham, sharp cheddar cheese, and onion omelet. Also, eggs make great casseroles when combined with savory brioche or any hearty bread...and of course plenty of cheese. Always cheese.
